Gluten Free Mini Apple Crumbles - Coeliac Safe

This recipe has come from the Peta at the Gluten Free Gospel - As soon as I saw it posted on her Insta Story, I knew I had to ask her to share it for us here! 

Ingredients:

For the apples: 

2 green apples, cored and chopped into 1cm cubes 
1 tsp caster sugar 
Squeeze of lemon

For the crumble:

35g brown sugar 
30g desiccated coconut
60g plain GF flour
Handful of chopped almonds - approx 40g (optional) 
Pinch of salt
50g butter 
Teaspoon vanilla essence

Method:

1. Portion out your chopped apples into 2-3 oven safe / air fryer safe baking dishes 
2. Sprinkle the caster sugar across all 3 
3. Add a generous squeeze of lemon across all 3 
4. Stir to combine 
5. Cover with foil and bake until apples are soft. I air fried mine for 15 minutes on 180C
6. Combine all the dry ingredients for the crumble in a bowl
7. Melt the butter and add then add the vanilla 
8. Mix to combine. If it feels a little dry, add more melted butter 
9. Once the apples are done cooking, remove the foil and add the crumble mixture across the top. Bake until golden. I air fried mine for about 10mins on 180C. 
10. Serve hot with GF vanilla ice cream 
11. Devour 🧡
